Dirty Friends Snack Mix

 

My kids love looking on the soda aisle and giggling over the names on the generic brand sodas. So here is my generic version of Muddy Buddies… with a little more nutritional cred.




Let’s talk substitutions. You can make this work. This is a “use it to clean out the pantry” recipe and the first time I made it for the family it was because I didn’t want to throw out half a box of Chocolate Chex and half a box of Honey Nut Chex because they were too stale to enjoy.




The chocolate. You can sub any kind of chocolate if you don’t have chips. I used Ghirardelli Melts because I had some from making Chocolate Dipped Bananas, but don’t run to the grocery store over it. This is also delicious with white chocolate or butterscotch chips. Also... try our Butterbeer Besties. They are magical.


But, the best part about this recipe is that you can sneak in some healthy options and the kids won’t even notice. So, grab a large microwavable dish and make yourself the Sunday afternoon hero.





Dirty Friends Snack Mix


9 c. of Chocolate Chex, or whatever type of Chex you have on hand.

1 c. Semi-sweet Chocolate Chips

½ c. Nut Butter, I use Peanut Butter, but use what you like.

2 T. Coconut Oil

2. T. Butter

1. t. Vanilla

1 ½ c. Powdered Sugar

Add Chocolate, Butter, Coconut Oil & Nut Butter to a microwave safe bowl. Heat uncovered on High 1 minute; stir. Microwave about 30 seconds longer or mixture is smooth. Add vanilla and mix.

Put cereal on a sheet pan and pour mixture over cereal, use a spatula to gently turn until evenly coated. Put powdered sugar in a 2-gallon resealable food-storage plastic bag. Add coated cereal. Close bag and shake until coated. Spread on wax paper to “dry” (about 10 minutes).

Store in fridge… if they last that long. You can keep them on the counter too if you like.

Dried Bananas, Large Flake Coconut, Dried Pineapple & Macadamia Nuts
